cauliflower gnocchi

what you need:

  • Trader Joe’s Cauliflower Gnocchi
  • Marinara sauce
    • homemade if you have your life together, Rao’s if not
  • Tahini
  • Spinach
  • Garlic
  • Olive oil
  • Red pepper flakes

what to do:

  1. Saute spinach with olive oil and garlic. Place aside when done.
  2. Add frozen gnocchi into the same pan. Add more oil if necessary. Cook through, the crispier the better.
  3. Add spinach, marinara, tahini, and red pepper flakes. Stir until combined and serve.

eggplant rollatini

  1. Cut the eggplants lengthwise, into thick slices. Sprinkle with salt and pat dry with a towel. Bake on 400 for 10-15 mins to soften.
  2. Line a baking dish with marinara.
  3. Combine egg, ricotta, mozzarella, spinach, garlic, salt and pepper in bowl to form filling.
  4. Spoon the ricotta-spinach mixture onto one end of each eggplant slice and roll into a tube shape. Set them into the baking dish and top with remaining marinara sauce and mozzarella cheese and cover with foil.
  5. Bake for 60 mins on 400 and live your best life.

shrimp scampi

what you need:

what to do:

  1. Combine shrimp, garlic, lemon, and ghee in a bowl and place on sheet pan. Cook for 15-20 mins on 400 degrees. 
  2. Cook pasta according to box or sauté zoodles in a pan with olive oil if you’re feeling healthy. 
  3. Serve shrimp with pasta and season with salt & pepper.
